My experience at BCN T2 recently:
after security check, I went to the toilet near the U gates on the same level of the shops and restaurants. There is no water coolers nearby as I can see. But when later I head to the toilet downstairs, near U37-U41, which locates closer to the other U gates with bridges, there is one water cooler/ fountain outside the male bathroom (not sure if there is also one near the female room). But damn I’ve already bought one bottle of water after the first toilet visit, and the first toilet was too smelly for me to get drinking water from at the tap!
There is at least one water fountain at the entrance to the toilets on the left downstairs in T1. I assume there may also be others.
There is another filtered cool one beside the toilets after you head towards gates B and C. Opposite the vino shop. 🙂
There is a fountain (in T2) between the toilets that are opposite the Burger King, which you’ll find if you continue to walk straight after coming through security and duty free. Note that the fountain is concealed behind a glass screen, as are the entrances to the toilets themselves.

There is also a drinking water fountain between the male/female toilets near boarding gates W/Y. It’s tricky filling a bottle, don’t take one too big. I managed to get about 400 ml’s in a 500 ml cycling water bottle.

There is a water fountain outside the restrooms across from D19. Pretty hidden away but it’s there. It has a filling station – tall bottles ok.

I will post pictures and exact location the next time I fly through there. 🙂 . Also, as far as I’ve been informed, you can always drink the water from the tap (it seems to come directly from the city supply, and it would not be stored in tanks but this information was provided by a person from AENA, the third party company hired to manage services at the airport and not by somebody with real expertise on the airport’s infrastructure, as per his own admission) . However, the water from the tap sometimes comes out lukewarm, which makes me believe it does come from a tank or it is mixed to some degree with water from tanks. As of November 23rd 2019, a 0.5 ltr plastic bottle of water (brand “Agua de Cuevas”) from a machine in the “patio” before passing the controls, costs Euros 1.80.

First I found a water fountain at the toilets near gate U41. Tricky to fill the bottle and water was warm!
Later I found a better fountain with cold water and a tap to fill bottles at toilets near gate Y63

Water stations have been removed upstairs T1 (D gates). Staff will send you to buy a plastic bottle in the shop or to a hand sanitiser if you ask for directions.
